Aya Street, the Petitenget based restaurant, took on-board Peru native Chef Gian Carlo a few weeks back and is
now serving his Peruvian fare inspired by Nikkei (Japan) and Chifa (China) influences, and a slight Indonesian
touch.

Nikkei is the term for the Japanese-Peruvian fusion cuisine based mainly on raw food, and Chifa refers to
Chinese cooking in which Peruvian and Chinese ingredients fuse creating a distinct culinary tradition.
