Perched along the sun-drenched cliffs of Bali’s southern peninsula, Uluwatu has long captivated soul-seekers, surfers, and sunset chasers. Our dining journey began with a refined take on a Piedmontese classic—Vitello Tonnato. The thinly sliced, aromatic veal arrived with an airy tuna and egg emulsion that was both light and flavourful. The garnish? Caper berries, not the usual salty capers. These delicate berries brought gentle acidity and a soft texture that balanced the dish beautifully, lifting the flavours and preparing our palates for what followed.

Still savouring the unexpected harmony of meat and sea, we moved on to the Ravioli al Granchio con Bisque di Aragosta e Burrata. These handmade parcels of crab meat delivered just the right al dente texture—rustic, yet elegant. They floated in a light yet flavourful lobster bisque, rich without being heavy. A swirl of burrata cream added a final, indulgent touch, bringing creaminess that highlighted the crab’s subtle sweetness.

Our final dish was the Guancia di Manzo al Vino Rosso con Polenta—a slow-braised beef cheek in red wine sauce, served alongside a golden polenta cake. Often overlooked, this cut shone with tenderness that still held a pleasing bite. The red wine glaze clung to every morsel—deeply flavourful and comforting. The polenta added contrast, stylishly plated, turning the dish into a perfect balance of richness and texture—for both the eyes and the taste buds.
