Building on the success of the “Epicurean Journey” chapters, Rumari restaurant at Raffles Bali is continuing its commitment to serving the most sustainable and delicious dining experiences. With its new "Rumari and Friends’" series, the restaurant explores different flavors from all over the world, inviting celebrity and rising chefs, for exquisite collaborations with Raffles’ Culinary Director Chef, Gaetan Biesuz.

Lyon native Chef Gaetan has spent much of his career exploring the flavors and ingredients of Asia. He has worked in luxurious restaurants in Thailand, Singapore, Malaysia, and Indonesia, and brings his French background blended with his Asian infatuation in his cuisine.

The first event of this series took place on January 20 & 21, 2023 with Chef-Patron of Basque Kitchen by Aitor, a 1-star Michelin in Singapore. Chef Aitor Jeronimo Orive grew up in the Basque region, where he developed his affection for cooking. He later went on to train at some of the world's most iconic restaurants, including Mugaritz in the Basque Country, Nerua in Bilbao and The Fat Duck in London.

During this exclusive four-hand dinner, each chef presented a selection of their signature dishes, blending perfectly the Basque influence of Chef Aitor and the South East Asian cookery passion of Chef Gaetan.




Black Heritage Pig by Chef Gaetan | Turbot, Pil Pil & Clams Chef Aitor


The Black Heritage Pig terrine prepared by Chef Gaetan reflected very well his Franco-Asian inspiration. A traditional pork terrine coated with bacon crumble, served with a light sambal ijo (green chili paste) and beetroot pickles. A staggering combination of East-meet-West made with Bali endemic pig, and local spices elevating the flavors of the paté! The Basque roots of Chef Aitor peaked with its Turbot, Pil Pil & Clams. The fish, stark white and firm with large flakes, had a subtle taste-of-the-sea flavor, while the rich Pil Pil, a typical Basque sauce made out of an emulsion of olive oil, garlic and the juices from the fish, looking like a bright mayonnaise - brought creaminess to the dish. Zoragarria!
