Bali sees more and more cocktail bars opening up, but it is ( or was) lacking one specific type:
a venue highlighting local ingredients. Above Eleven Rooftop Bar & Restaurant in Jimbaran, renowned
for its unique and stunning view over the bay, has launched a new cocktail menu based on homemade
infusions and syrups made of home-grown elements.
Each ingenious cocktail creation of Rhama Aprian, the Head Mixologist there, showcases a region
of the island, from East to West and North to South, with intriguing names such as The Heritage,
Denpasar Kisses, Jimbaran Bay, 7 In East, Black Sand, Bangli Zephyr, Klungkung Breeze, Dolphin’s Song
and Betutu Old Fashioned. It works and might set the stage for the voyage you’re bound to have once
you’ve sipped a couple of the bartender’s creations.

For instance, The Heritage embodies Tabanan area with Jatiluwih rice paddies as UNESCO World Heritage
and fresh strawberries plucked straight from the Bedugul strawberry farms. The Jimbaran Bay cocktail blends
gin, peach liquor, blue curacao, pineapple juice, lime juice with a mixture of salt and water recreate beautifully
the contrasted colours of the coastline. The Black Sand reflects Gianyar’s famous black sand beaches and
their homegrown jackfruits as a local source of the cocktail which include home-made spiced rum, home-made
jackfruit syrup, coconut milk, mint, chilli, lime juice, and ginger soda.
The drinks are blissful, perfectly executed and impeccably presented, and the service is smooth as silk.
The new island-inspired cocktails menu at Above Eleven Rooftop Bar is available 7-days a week
from 4.00pm – 1.00am with prices starting at IDR 140,000 ++. Cheers!
