Dishes like Seared Ling Cod Crispy Skin with Mussel Duxelles, Shredded Fennel & Tomato Jam “au Safran”
as well as Charcoal Grilled Tiger Prawn, Citrus Purée, Pickled Radishes & Sangria Jelly touch on the
Mediterranean side of Cyril's roots, while other dishes like Crab Meat Zucchini Carpaccio, Fresh Coriander,
Harissa Mayonnaise & Pesto Coulis, or Lamb Rack Roasted with Merguez Sauce, call to how these flavours
develop and shift as they migrate towards the African continent.
