Our meal began with the Pomelo Salad, a light and refreshing starter that instantly transported me to evenings spent enjoying rujak on Bukit cliffs with friends. The magic of tamarind brought those sunsets back to life. Then came Ledok Nusa, a creamy and comforting soup topped with fried sambal matah. One bite, and I told my dining companion, “I could have 10 more plates of this.”
Pomelo Salad
The mains were equally mesmerizing. The Seafood Seraten featured perfectly cooked seabass in a delectable Sena Cekuh coconut broth. Even though I was already full, I couldn’t resist pairing it with a spoonful of white rice. The finale, Bebek Se’i, a hay-smoked duck served with a delicate sweet potato purée, was a beautiful blend of textures and flavours—a dish that felt like a warm embrace.
Sebass Seraten
Chef Wayan’s creations go beyond mere nourishment. Each bite evokes memories of his mother’s cooking in Nusa Penida or the vibrant tastes of after-school meals at a warung. It’s a celebration of bumbu, the spice blend that paints his dishes with layers of savory essence and meaning.
