Mozaic Restaurant presents a very special dinner by Chef-Owner Chris Salans, featuring the sublime black truffle, as part of the Goût de France/Good France celebration of French gastronomy, an international culinary event on 21–24 March 2019 across five continents with the participation over 3,000 top chefs around the world,
Chef Salans, whose special genius is marrying Indonesian flavours and luxurious imported ingredients with French culinary techniques, has created for this evening a special menu of ever-increasing fascination that explores the range of the black truffle, from amuse bouche to dessert. Each course will incorporate truffles in a rich and surprising way, with pairings of fine French Premier Cru and Grand Cru wines.
The truffles will be imported from France in March near the end of their season, thus assuring that they will be mature and full of flavour.
It is important to note that the dessert will be inspired by celebrity pastry Chef Balazs Enzsol, a good friend of Chris Salans, who has graciously donated this mind-blowing recipe for the occasion – a Valrhona chocolate, black truffle mousse built around a wild chicken claw!
