Dine & Stay: Kojin Teppanyaki & Omakase at Aksari Resort Ubud - Dine & Wine Bali

In a quiet corner of Ubud, close enough to some of the area's most popular attractions, there is a magnificent retreat in a secretive setting. Aksari Resort Ubud is designed to give guests a tranquil and personal experience, while also providing them with stunning views of the natural surroundings. The resort offers the perfect setting for a rejuvenating breakout.

Dine - The Culinary Experience

Bali being a land of culture it proudly embraces all the delicious cuisines that the world has to offer. Kojin Teppanyaki & Omakase restaurant is a great place to experience traditional Japanese dining in a serene setting. The all-wood structure and earth-coloured tones create a bistro-chic atmosphere, and the open-kitchen dining experience allows guests to interact with the chefs.

Some of Kojin's dishes that are not to be missed include the seared Scallop with Shiso Oil, Shiro Shoyu & Salmon Roe, and the Black Cod with Miso Shoyu, Teriyaki and Citrus Sauce. The fish glazed with Teriyaki was well carnalized and fondant. For a complete experience, the Omakase 7-course set is a no-brainer. Omakase is a Japanese word that means "leaving another to choose what's best." A sophisticated, multi-course set menu of seasonal, both local and Japanese ingredients which celebrate balance in colour, flavour, texture, and temperature.

The kappo-style service (when diners sit at a chef’s counter, and can watch him prepare dishes and get a sense of his technique and style) involves both raw and cooked dishes, some simple, others more complex, but all prepared meticulously. The overall meal was delicious, but the Chawanmushi (steamed egg custard) was especially amazing. The dish was presented in a sea urchin shell and was smooth and silky. The contrasting textures of the egg preparation with the sweet-savory Sea Urchin and Black Fish Roe made each bite interesting and enjoyable. The dashi added a nice touch of flavour to the dish, making each bite utterly satisfying and surprising.

The other restaurant on site is Ankhusa Restaurant Ubud. The all-day dining, with semi-outdoor decorations overlooking the lush jungle above a local river, is serving authentic Indonesian cuisine and global favorites. The Tasmanian Salmon Gravlax, served with Mustard Dill Sauce is a must-try if you want to experience true culinary delight. It is rich and packed with vivid flavours that will tantalize your taste buds. The salmon cured with some beetroot and spices, had a gorgeous magenta hue, earthy herbaceousness, and a moist, silky and “raw-like” texture. The Babi Panggang Karo was another standout dish. A pork belly that had been brined for 48 hours with Andaliman spice, resulting in crispy skin and meltingly tender meat.
