Dine & Wine Bali - En Route to Seminyak

Melt-in-the-mouth tender and packed with flavours, dry-aged beef is exquisite. Over the past few years, the culinary world has seen rising interest in beef which has been dry-aged, particularly sought out by gourmets and foodies.

At Boy‘N’Cow, a Steakhouse & Lounge in Seminyak, they offer several cuts of 28-day dry-aged beef, from the 280gr Striploin to the 1kg Tomahawk, all, grain-fed Black Angus, either from Australia or USA. The two-level restaurant, with its magnificent bar on the second floor, and its urban-prohibition-era style interior is a must-try for any carnivores. Especially these days and I’ll tell you why in a minute. A look at their dry-ageing “vault”, with kilos and kilos of meat being processed, shows how seriously they commit themselves to high quality and righteous hygiene standards.

The procedure for dry-ageing beef is quite complex and time-consuming. The beef is stored in a purpose-built temperature-controlled room that also maintains the right level of humidity and constantly controlled air movement so the natural enzymes break down the internal meat fibres to increase the tenderness and flavour of the meat. Then, when the beef is aged sufficiently, according to the chef’s needs, it’s trimmed of the majority of its fat - around 25 to 30% of the meat - the reason why dry-aged beef has a higher cost than non-aged beef.

If you are not familiar with the method, the strong taste and aroma of dry-aged beef could be gross, but worry not, Boy ‘N’ Cow also offers wet beef, plus, a “beefless” section where you’ll find fish, chicken, pork and even vegetarian option. But, if you are a meat-devourer, for the whole month of November and until December 15th 2019, you will have a whale of a time, as the venue has a great bargain with their TWO IS BETTER THAN ONE steak promotion.
