Karma Kandara Bali is undoubtedly one of the best-located resorts on the Bukit peninsula in Ungasan, with its private white sand beach and hill-top villas. The restaurant Di Mare is equally spectacular, perched on the side of a cliff overlooking the Indian Ocean, it’s hard to imagine a better place to eat. The view from the semi-open-air restaurant matches the views on the plate.

Di Mare’s Senior Executive Chef-SEAP Joseph Antonishek's signature cuisine spotlights atypical local ingredients sourced from all over the archipelago, prepared in Mediterranean cooking style to emphasize the freshness and the taste of its findings.
Once a month, di Mare hosts a tasting wine dinner to explore some of the best wineries, from all continents. We have experienced the Penfolds Wine Dinner, a 5-course set, with dishes inspired by several other resort locations from the group. Bold flavors and bright colors on the plates, and of course a lot of Australian wines.
The Baked Brie Tartlet prepares the palate well for the feasts to come, with its lovely lemony flavor from the Crème Fraiche Espuma, nicely complemented by the Bin 51 Riesling with its light acidity and citrus sweetness. The Chicken Tikka Masala Croquettes blended nicely with the Penfolds Max’ Chardonnay smokiness and vague astringency. The origin of chicken tikka masala is a matter of debate as cited on the menu. Some believe it originated in India, while others say it originated in Scotland when a Bengali chef had to improvise a dish in a hurry. Today, many people in the UK consider it to be their national dish.
The Ravioli of Duck Leg & Foie Gras with Dried Strawberry & Sage Creamy Sauce played on well the complementarity of flavors. The fruit sugariness and the aromatic herb fusion-ed pleasantly with the Bin 23 Pinot Noir with its grenadine ending, tobacco hint and light body. The main course honoring Karma Château de Samary in Carcassonne was fine art. A melt-in-the-mouth Wagyu Beef Short Ribs braised with Magao Berry, served with tender Koro beans, Fennel, Smoked Bacon & strong Braising Jus. The wine to accompanied was the typical Penfolds style Bin 407 Cabernet Sauvignon with hints of ripe raspberries and currants, dark chocolate, dried mint, and grainy tannin.
The evening ended with chef Joseph take on the Melopita, a cheese pie originally from Greece, made of Goat Cheese and Honey, topped with Port Wine Poached Local Fig, served with Penfolds Club Tawny. A delicious fortified wine with aromas and feelings reminiscent of Porto from Portugal. This New World wine may surprise you with its similarity to its Old-World counterpart.
The dinner has been expertly prepared, with excellent wines, in a modern designed interior and a breathtaking scenery. A truly enjoyable experience, one that immerses you in the moment and leaves you with lasting memories.
At Di Mare, you can also enjoy Chef Joseph's cuisine through four different tasting menus, or by ordering à-la-carte. There are also many vegetarian options available. And the lunch menu offers a variety of local cuisines from India, Vietnam, Thailand, Italy and Egypt, all influenced by the company's recently launched river Nile cruise, the Karma Karnak. To finish off, the wine list includes many great options, compiling a diversity of blends, grapes varieties, and styles.
